Chopsuey Recipe / Family Home Cooking...cooking anyhow

Chopsuey is a a mixed vegetable dish popularized by the Chinese residing in the Philippines.  The vegetable dish is often served at the Chinese Restaurants in the Philippines.

We also add shrimps and chicken and thicken the sauce with starch.
































Chopsuey Recipe

Ingredients

1/4 kl shrimps (peeled off and deveined)
1/2 kls boneless chicken (boiled and shredded)
       set aside 1 cup chicken broth)
4 cloves of garlic (crushed with the knife and fork)
1 big onion
2 tsp cornstarch
1 tbsp oyster sauce
Broccoli
1 medium green and red bell pepper
1 small cauliflower
snow peas (around 10 pcs or more)
1 medium carrots
Shrimp juice (extracted from the clean shells and head of the shrimps)
      pour 2 cups boiled water to the shells and head of the shrimps
      mash gently with spoon to extract juice
      drain and set aside the juice
1/4 cup water to dilute the cornstarch
salt and ground black pepper to taste

Cooking directions:

Saute the garlic and onion.
Add the shredded chicken and shrimps and saute again for about 2 minutes
Sprinkle some salt and pepper
Pour in the shrimp juice and the chicken broth, Cover the pot  and bring to a boil.
Add the oyster sauce and simmer for 2 minutes
Add the cauliflower, carrots and snow peas.  Mix well then cover the pot and simmer until the veggies are almost cooked.
Add the green & red bell pepper, blanched broccoli and simmer for 30 seconds.  (I prefer the capsicum a bit crunchy)
Add the diluted cornstarch and mix well for a minute.
Serve hot.
